Spicy Tuna and Tomato Sauce
Ingredients (2- 3 portions)
1 medium size onion, finely chopped
3 garlic cloves
1 green pepper, chopped
2 inches/8cm fresh ginger, peeled and grated or finely chopped
1 x 400g can chopped tomatoes
1 vegetable stock cube
1 x 160-200g can of tuna in springwater or in brine
Black pepper to taste
200g (2- 3 mugs) dried pasta or 140g (1 mug) rice
Preparation for Conventional Method
1- Cook pasta or rice following the instructions of the packet.
2- Add a tablespoon of vegetable oil to the pan and stir fry the onions and garlic. After a 3 minutes, when the onion is transparent and soft, add the pepper and ginger and cook for 5 minutes, stirring occasionally.
3- Stir in the tomatoes and stock cube, cover and cooked in medium heat for 10 minutes, then add the tuna and seasoning to taste, cover and simmer for 10 minutes or until piping hot.
4- Serve with the cooked pasta or rice.
Preparation for Microwave Oven
1- Cook pasta or rice following the instructions of the packet.
2- Put the onion, garlic, green pepper, ginger and 2 tbsp of water in a microwave-proof bowl, cover with cling film, pierce and cook on "full" (100%) for 2-3 minutes.
3- Stir in the tomatoes and stock cube. Cover and cook on full for 3 minutes.
4- Add the drained tuna and black pepper, cover and cook for 2 to 3 minutes until piping hot.
5- Serve with the cooked pasta or rice.
